The biggest differences in the Brassica Oleracea plants are in the leaves because the leaves of different species have different shapes, sizes, colors and textures.  I would say that the greatest range of variation among the species was also in the leaves. For instance, broccoli has tiny leaves but kale has huge leaves and the leaves of different species are also different colors.  Long ago, when all the brassica plants were in the same area they probably all had the same traits. Then natural variations and mutations starting happening. Also, people started selecting them for selective breeding like artificial selection and that's when the genes started to change. Descendants started to pass different modifications and started changing which was called descent and modification.  Changes might have been caused by natural variation like droughts and bug swarms. Plants develop adaptations to these changes, which modifies their genes. Something that might affect plants are mutations like RNA getting copied wrong.
